Freezing rate sets ice crystal size and time through the -1C to -5C damage band. Recrystallisation and repeated freeze-thaw cycles increase tissue damage and drip loss.
Faster is not monotonically better; excessively low liquid-nitrogen temperatures can also harm muscle quality. No head-to-head peer-reviewed block-frozen versus IQF shrimp trial was found.
