THE SHORT ANSWER
Why do wild shrimp taste more like the sea?
Diet can influence marine flavor compounds such as bromophenols. Wild shrimp that feed on marine worms and algae may carry more of those compounds, but wild versus farmed alone does not determine flavor.
Limited evidence
Diet contributes marine flavor compounds such as bromophenols.
The science in more detail
Bromophenols, principally 2,6-dibromophenol, come from the diet - polychaete worms above all, then marine algae. Shrimp do not synthesise them.
No study of bromophenol retention by cooking method exists. Method interactions are mechanistic predictions only.
