The science in more detail
The dry-heat window is set by how long the shrimp can hold a hot surface before its core is finished - which is a function of mass. And the compounds that read as 'roasted shrimp' are pyrazines, thiazoles and thiazolines derived from shell and viscera, not from the meat.
No study instruments shrimp surface temperature against interior temperature by size grade. No peer-reviewed matched shell-on versus peeled cook-loss trial was found.
