Good for

Northern cold-water pink shrimp (salad shrimp)

Raw is the highest use of this shrimp - if you can get it raw at all.

What to keep in mind

Use it cold and dressed. If you want the raw ingredient, buy raw-grade amaebi, which is a different product on the same shelf - that distinction is the single most useful thing the site can tell a reader about this species.

Good for

Kuruma prawn

This is the exception: live kuruma is eaten raw in Japan. The channel makes it safe enough to be a tradition.

What to keep in mind

Treat it as Group A for every cooked method, and as a raw ingredient only when it arrives alive or air-freighted whole. Its classical cooked preparation, irojime, is worth teaching on its own: live prawns skewered head to tail to stop them curling, dropped into heavily salted water with a splash of vinegar, then shocked in ice.

Raw the day it arrives is the best thing that happens to this animal.

What to keep in mind

Grill, sear or roast it, one to two minutes a side, pulled early because it carries over. Peel it raw, which is easier than peeling it cooked. Boil-and-drain stays ruled out: a boil flushes the hepatopancreatic fat that California Sea Grant says dry heat exists to keep.

Processing can change the answer

Land-frozen

Hours to days of chilled transport happen first, with autolysis running the whole time - and for pandalids that clock is fast, with myosin heavy chain degradation detectable within five hours on ice. Then the product freezes, often as a block with a long thermal path to the centre, so interior shrimp cross the damage band slowly.

Frozen at sea

Freezing rate sets ice crystal size: above 2 cm/h gives 10-50 micron crystals confined to interstitial spaces, against 100-300 micron dendritic crystals that pierce membranes below 0.5 cm/h. Frozen at sea crosses the -1 to -5C damage band once, fast, hours after capture, and before autolysis has run.

Previously frozen, sold thawed at the counter

This is previously-frozen product that has taken an extra freeze-thaw cycle plus an unknown period at counter temperature - time spent walking through both the cathepsin optimum band and the bacterial growth range. Freeze-thaw damage is monotonic in cycles: after 21 cycles colony counts and TVB-N exceed the edible standard, with hardness, elasticity and chewiness all declining, and the published recommendation is fewer than eight.

Precooked (cooked and frozen, or cooked and chilled)

Hardness is an integral of time at temperature, and cook loss, shrinkage and hardness correlate at 97.8, 92.3 and 88.4 percent. Every reheat moves further up the same monotonic curve and nothing re-hydrates.
